Founded by Chef Jason “Jay” Richardson, Mericana is where culinary passion meets American innovation. A 13-year veteran of the United States Air Force Security Forces, Chef Jay followed his true calling after military service by exploring the diverse flavors of global cuisine. He holds a Bachelor of Science in Culinary Management and is a Certified Chef through the American Culinary Federation.

Chef Jay’s culinary journey has taken him deep into the art of American BBQ, the bold flavors of Peruvian chaufa, the tradition of Argentinian asado, the finesse of French cuisine, and the craft of artisan baking. His career spans roles from Chef de Partie to Executive Chef at award-winning restaurants and prestigious country clubs across Pittsburgh, PA.

Now based in Kentucky to be closer to family, Chef Jay brings his extensive experience and passion to Mericana—a dynamic food truck that will incorporate fine dining, and catering ventures. Focused on farm-to-table cuisine, Mericana is redefining local food culture with unforgettable flavors and elevated experiences.
